Apple & Pork Kebabs
Served with a mustard sauce.

Ingredients:
- 450g Pork Fillets
- 2x Eating Apples
- A splash of lemon juice
- 1x lemon
- 2tsp of Dijon mustard
- 2tbsp of apple or orange juice
- 2tbsp sunflower oil
- Mixed Salad
Mustard Sauce:
- 1tbsp whole grain mustard
- 1tsp Dijon mustard
- 6tbsp single cream
- First the mustard sauce, mix the Dijon mustard with the wholegrain mustard in a small bowl and slowly and add and blend the cream.
- Cut the pork into nice bite sized pieces.
- Core the apples, then cut them into thick wedges, then toss the wedges in a little lemon juice, also slice the lemon.
- Thread the pork, apple and lemon onto your 4 skewers (if you use wooden skewers then pre-soak them).
- Add the apple or orange juice and sunflower oil to the mustard mix and brush over the kebabs and then barbecue or grill until cooked through (frequently turn the kebabs during cooking).
- Place kebabs on serving plates and add mixed salad.
