Vegetable Bake
What could be more simple than slicing up some potatoes and throwing in some beans…
- 1tbsp of virgin olive oil
- 1tsp of paprika
- 2x large red onions
- 2x crushed garlic cloves
- 400g of cannellini beans (drained and rinsed)
- 2x large baked potatoes
- 1x large courgette
- 4x tomatoes
- 2tbsp of tomato puree
- 150ml of vegetable stock
- 25g of parmesan
Cooking:
- Pre-heat the oven to 220C
- gently fry the onion and garlic for 10mins
- Add the paprika, tomato paprika and beans – then place in ovenproof dish
- Boil the potatoes for 5mins, drain and spread over the beans. Top with courgettes and tomatoes.
- Pour the stock over the potatoes and bake for 35mins and finally spinkle parmasan and cook for further 10mins, until golden.
